Try this simple recipe for a delicious chicken stew with odjom:

Ingredients:

  • 1 chopped onion
  • 3 cloves of chopped garlic
  • 1 tbsp oil
  • 4 cups chicken stock
  • 2 cups shredded chicken
  • 1 chopped carrot
  • 1 chopped celery stalk
  • 1 chopped green pepper
  • 1 chopped red pepper
  • 1 cup okra, chopped
  • 1/2 cup dried odjom leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions:

  • Heat the oil in a large pot over medium heat and sauté the onion and garlic until soft.
  • Add the chicken stock and bring to the boil.
  • Add the shredded chicken, carrot, celery, green and red pepper and stir.
  • Reduce the heat and simmer the stew for about 20 minutes.
  • Add the okra and the dried odjom leaves and stir.
  • Season the stew with salt and pepper and simmer for another 10-15 minutes.
  • Season to taste and add more seasoning if necessary.
  • Serve the stew with rice or bread.
