Here is a simple and delicious recipe that uses bird pepper:

African chicken stew with bird pepper.

Ingredients:

  • 500g chicken breast fillet, cut into bite-sized pieces.
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, chopped
  • 2 carrots, peeled and sliced
  • 2 peppers, seeded and diced
  • 2 tomatoes, diced
  • 1 tsp bird pepper
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp paprika
  • 500ml chicken stock
  • salt and pepper to taste

Preparation:

  • Heat the olive oil in a large pot and sauté the onion and garlic until translucent.
  • Add the chicken pieces and stir-fry until lightly browned.
  • Add the carrots, peppers and tomatoes and cook for another 5 minutes.
  • Add the spices and chicken stock and bring to the boil.
  • Reduce the heat and simmer the stew, covered, for 30-40 minutes until the chicken is cooked and the vegetables are soft.

Season with salt and pepper and serve hot.
