Odjom is an ingredient commonly used in West African cuisine. It has a pungent, bitter taste and is used as a seasoning in soups, stews and sauces. It can also be brewed as a tea and is said to have medicinal properties.
Our dried odjom is easy to use and can be used in a variety of recipes. For example, use it to add more flavour to your favourite stew, or add it to a chicken soup for a touch of spice.
Try this simple recipe for a delicious chicken stew with odjom:
Ingredients:
1 chopped onion
3 cloves of chopped garlic
1 tbsp oil
4 cups chicken stock
2 cups shredded chicken
1 chopped carrot
1 chopped celery stalk
1 chopped green pepper
1 chopped red pepper
1 cup okra, chopped
1/2 cup dried odjom leaves
1 teaspoon salt
1/2 teaspoon black pepper
Instructions:
Heat the oil in a large pot over medium heat and sauté the onion and garlic until soft.
Add the chicken stock and bring to the boil.
Add the shredded chicken, carrot, celery, green and red pepper and stir.
Reduce the heat and simmer the stew for about 20 minutes.
Add the okra and the dried odjom leaves and stir.
Season the stew with salt and pepper and simmer for another 10-15 minutes.
Season to taste and add more seasoning if necessary.
Serve the stew with rice or bread.
