Here is a simple and delicious recipe that uses bird pepper:
African chicken stew with bird pepper.
Ingredients:
500g chicken breast fillet, cut into bite-sized pieces.
2 tbsp olive oil
1 large onion, chopped
2 cloves garlic, chopped
2 carrots, peeled and sliced
2 peppers, seeded and diced
2 tomatoes, diced
1 tsp bird pepper
1 tsp turmeric
1 tsp cumin
1 tsp paprika
500ml chicken stock
salt and pepper to taste
Preparation:
Heat the olive oil in a large pot and sauté the onion and garlic until translucent.
Add the chicken pieces and stir-fry until lightly browned.
Add the carrots, peppers and tomatoes and cook for another 5 minutes.
Add the spices and chicken stock and bring to the boil.
Reduce the heat and simmer the stew, covered, for 30-40 minutes until the chicken is cooked and the vegetables are soft.
Season with salt and pepper and serve hot.
