Ingredients:
500g KOKI beans
200ml palm oil
1 onion, chopped
1 pepper, chopped
2 tomatoes, chopped
2 cloves garlic, chopped
1 tbsp cumin
1 tbsp paprika powder
Salt and pepper
Banana leaves
Instructions:
Wash the KOKI beans and soak overnight.
The next day, drain the beans and grind finely in a blender or food processor.
Fry the onions, peppers, tomatoes and garlic in a pot with palm oil until soft.
Add the beans and spices and cook everything together for about 15 minutes until the mixture is thick and well blended.
Lay the banana leaves on a work surface and place a portion of the bean mixture on each.
Fold the banana leaves over the mixture to form a sort of packet.
Steam the KOKI packets for about an hour until they are firm and well cooked.
Serve the KOKI packets hot and enjoy the authentic aroma and taste of Cameroon.
