Kanwa and Nacron have been popular in Cameroon for centuries and are made from the seeds of the African pepper. They give your food a spicy, slightly hot aroma and are particularly suitable for meat dishes, soups, stews and vegetables. But they also come into their own in sauces and dressings.

Here is a traditional Cameroonian recipe for you: Cameroonian chicken with kanwa or nacron.


Ingredients:

  • 4 chicken legs
  • 1 onion, chopped
  • 2 cloves of garlic, chopped
  • 1 tomato, chopped
  • 1 tbsp tomato paste
  • 1 tbsp kanwa or nacron
  • 1 tsp turmeric
  • 1 tsp paprika powder
  • salt and pepper
  • 500 ml chicken stock

Instructions:

  • Heat some oil in a pot and fry the chicken legs on both sides until golden brown.
  • Remove the chicken from the pot and set aside.
  • Add the onions and garlic to the pot and fry until soft.
  • Add the chopped tomato and fry for 2-3 minutes.
  • Add the tomato paste, kanwa or nacron, turmeric and paprika and fry for another 2-3 minutes.
  • Put the chicken back into the pot and pour the chicken stock over it.
  • Let everything simmer for about 30 minutes until the chicken is cooked and the sauce has thickened.
  • Season with salt and pepper and serve.
